Skyr belongs to Iceland like popcorn to a movie visit. Not only in its pure form, it is extremely delicious, but also as an ingredient for these delicious biscuits, it comes out well. The recipe is really very simple and always succeeds.
Cream the soft butter with the sugar (icing sugar, brown sugar and vanilla sugar). Separate the egg. Put the egg white aside, it is no longer needed. Add the egg yolk and Skyr to the butter-sugar mixture and stir. Finally, knead the flour.
Refrigerate the dough in the refrigerator for 1 hour to allow it to work better.
Dust the work surface with flour and roll out the dough in portions (about 4-5 mm). Cut a small rectangle (about 2 x 3 cm) with a dough/pastry stamp cutter wheel or simply a knife. If you like, you can decorate the biscuits with a biscuit stamp.
Place the biscuits on a baking tray lined with baking paper.
Bake in a preheated oven at 180 °C (350°F) top and bottom heat for about 15 minutes until golden brown and then add about 10 minutes of residual heat.
Allow to cool briefly and turn warm in the sugar mixture. Lay individually on a wire rack until they are cold.
